Sweet Pickled Pork Roast
2 sweet pickled pork roasts
2 kg potatoes, sliced
1L broth (chicken or beef to taste)
30gr of butter or goose fat
In a large casserole dish spread the sliced potatoes
Cut the onions in fine slices. Spread over the potatoes and add another layer of potatoes on top.
Cover with the broth and top with the two sweet pickled pork roasts.
Spread butter on top of roasts. This will make them brown.
Preheat oven 10 minutes at 180°C (350°F)
Cook for 1h15 approx.
Vegetable Stew with Sweet Pickled Pork Roasts
2 or 3 sweet pickled pork roasts
1 large onion, minced
1 cup of rutabaga, diced
3 celery stalks, diced
4 big carrots, sliced
1 small cabbage in wedges
Green or yellow beans to taste
3 medium size potatoes, cut in 4
1 celeriac, diced
1 laurel leaf
¼ tsp of thyme
¼ tsp of allspice
4 cups of beef broth or 1 can of consomme with 3 cups of water
2 tablespoons of parsley upon serving.
Cook at medium/high for 1 hour then turn to low temp for 5 hours.
